This easy and tasty banana chia pudding is packed with flavor and sweetness. It is a plant based staple of mine that I love to have for breakfast or as a quick and easy snack.
Plus, you can whip this recipe up in just a few minutes. Then, all you have to do is let it sit and chill in the refrigerator for about an hour. After that, you simply add your desired toppings, dig in, and enjoy. Now, let's dive right into the recipe!

Ingredients:
- 1/2 medium overripe banana
- 2 tbsp chia seeds
- 1/8 tsp cinnamon
- 1/4 cup non-dairy milk (I used unsweetened vanilla almond milk)
- 1 tsp pure maple syrup (plus more for topping)
- creamy peanut butter (for topping)
Directions:
- Blend the non-dairy milk with the cinnamon, pure maple syrup, and 1/4 of the banana.
- Pour the banana milk mixture into a container that has a lid.
- Add the chia seeds and mix well to combine.
- Slice the remaining 1/4 of the banana up and add it on top of the chia seed mixture.
- Pop the lid on the container and place the chia pudding in the refrigerator for at least one hour to chill and set.
- When, you're ready to eat your banana pudding, transfer it to a serving dish and top it off with some peanut butter and pure maple syrup to taste.
- Dig in and eat up!
