  1. Add the warm water and yeast to a large mixing bowl. Let the mixture sit for five minutes to bubble up.
  2. Add the whole wheat flour, 3/4 of the all-purpose flour, olive oil, maple syrup, and salt to the water and yeast mixture. Mix all ingredients together to form a slightly sticky dough ball.
  3. Dust a smooth, clean surface with some of the remaining all-purpose flour.
  4. Knead the dough ball for 4-5 minutes, slowly adding the remaining all-purpose flour to keep the dough from sticking.
  5. Divide the dough into two to four spheres of equal size.
  6. Shape the dough spheres into two large or four mini bagels.
  7. Place the bagels on a lined or greased baking sheet and cover them with a towel.
  8. Let the bagels rise for about 80 - 90 minutes.
  9. Preheat the oven to 425°F.
  10. Bake the bagels for about 20 minutes, or until golden brown.
  11. Let the bagels cool for a bit.
  12. Slice the bagels in half.
  13. Enjoy the bagels warm and fresh with whatever toppings you'd like!
