We've been revisiting some of our favorite recipes. A restaurant we used to visit in Ocean City, Cousin's Restaurant, published a cookbook just before she retired and sold the business. The recipes are spot on - exactly like what she used to make! If you're looking for a good cookbook containing many Italian standards, you can find Cousin's Cookbook: Recipes for Food, Family, Friends, and Faith still available on Amazon. I've ordered several copies for friends, and although many are used, they've arrived in very good shape.
The original recipe for her Lasagna is on page 181 and it has you cooking the raw Lasagna noodles before assembling the dish. You also were to make her Marinara Sauce to use in the recipe. We've simplified this and found that using Barilla Oven Ready Lasagna along with Silver Palate San Marzano Blend Marinara Sauce works just fine when you're in a hurry. I hope you enjoy it!
Ingredients:
- 2 boxes (9 ounces each) of Barilla Oven-Ready Lasagna
- 4 cups ricotta cheese
- 1/2 cup Romano cheese (freshly grated is preferred)
- 2 large eggs
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- 1 jar (25 ounces) of Silver Palate San Marzano Blend Marinara Sauce
- 1 package (8 ounces) of Sargento Shredded Off the Block Mozzarella Cheese
- Optional garnish: fresh basil leaves
Directions:
- Preheat the oven to 350 degrees.
- In a bowl, blend the ricotta cheese, Romano cheese, onion powder, garlic powder, black pepper, eggs, and 1/4 cup of the Marinara sauce. Mix thoroughly to combine.
- In a 9x12" glass baking dish, place a thin layer of the Marinara sauce.
- Layer the noodles, cheese mixture, and Marinara sauce (in that order) and repeat the process three times. Top this with another layer of noodles and Marinara sauce, and finally cover this with the remaining Mozzarella cheese.
- Bake in the preheated oven at 350 degrees for 1 - 1 1/4 hours.
- Once removing the Lasagna from the oven, allow it to rest for 15 minutes. Cut and serve topped with an optional garnish of fresh basil leaves.
