Last year at Easter, my husband did some searching for how to reheat a fully cooked ham so that it doesn't dry out. He found a post from Daniel Mancini on Facebook and we were pleasantly surprised that his method worked perfectly! He suggested a glaze recipe that we thought was excellent. We've changed his steps slightly and have been happy with the results each time we've done this.
Most times when you purchase a fully-cooked ham, it will tell you to heat it at 350 degrees for approximately 15 minutes per pound. We've done this - and been unhappy with the results. Oftentimes the ham will dry out, and there's nothing I enjoy less than a dried-out ham.
Just make sure that if you want to use these directions, the ham is fully cooked when you purchase it. Many will come with a glaze packet, but we prefer the recipe he suggested.
What You'll Need:
- A very large pot like a lobster pot or a Dutch oven
- Toothpicks for attaching the pineapple slices to the ham
Ingredients:
- A fully-cooked ham (we like spiral-sliced)
- One can (16-20 ounces) of pineapple slices
Glaze Ingredients:
- 1/2 cup of real maple syrup
- 1/2 cup of light brown sugar, tightly packed
- 2 tablespoons of Dijon mustard
- 1/2 teaspoon of ground cinnamon
- 1/2 teaspoon of ground nutmeg
- 1 tablespoon of bourbon
- Optional: add in some of the pineapple juice if you like the flavoring
Directions:
- Remove the ham from the refrigerator two hours before you plan to start heating it. This will allow it to come up to room temperature.
- If the packaging the ham is in is fully sealed, we leave the ham in the bag. If you prefer, you can remove the ham from the existing packaging and place it into an oven-proof large turkey bag. If you are using a turkey bag, squeeze out all of the air and tie the bag tightly.
- Place the ham into a very large pot (we use either a lobster pot or a Dutch oven) with the tied end facing out. Fill the pot with extremely hot tap water, and let it sit for 15 minutes.
- At the end of the 15 minutes, drain out the water and repeat, filling the pot with extremely hot tap water. Repeat this for a total of one hour (so you will have filled the pot with extremely hot tap water four times).
- After the second filling, preheat the oven to 400 degrees F.
- After the third filling, make the glaze in a pot on the stovetop. Mix all ingredients for the glaze on low heat for 2-3 minutes.
- At the end of the hour, the ham will be warm (at around 110 degrees F internally) but not dry.
- Remove the ham from the bag and place it into a roasting pan. Glaze it. Attach the pineapple slices to the ham with toothpicks.
- Place the ham into the preheated 400-degree F oven for 15 minutes, basting it with the glaze as it further warms.
- Once you are happy with the glazing, remove the ham from the oven. Cover it tightly with aluminum foil and let it rest for 10 minutes.
