Casa Corona is one of my favorite Mexican restaurants in Fresno. I know there are a lot of Mexican restaurants to choose from and I'm sure they are good also. I haven't tried, but two, Casa Corona and Salsa's Cantina in Clovis. I'm looking for recommendations for others to try, so add them to the comment section, and Patti and I will try them.
We're talking about Casa Corona and our meal the other day.
Patti's Order
Patti ordered one of my favorite dishes from Casa Corona on Herndon and Cedar, the King Nachos, which is listed as an appetizer, most likely an order for the entire table to share with the amount of fixings on them. Still, they are also an excellent meal for a person that leaves leftovers for the next day.
I have had other nacho dishes from different restaurants, and they don't come close to the abundance of nachos and toppings Casa Corona serves.
Among the apparent abundance of toppings served by Casa Corona is the flavor their nachos have. It's amazing. No other restaurant has come close. They don't have to worry about king nachos because they are the King of Nachos.
Back to Patti's Order
She went with the ground beef topping along with avocado, tomatoes, jalapeno peppers, sour cream, and cheese. She opted out of the cheese. If you order the nachos, get the cheese, it's worth it. For some reason, to me, nachos without cheese are not nachos.
They looked good as always, and the nachos were piled high on her plate with, as I said before, an overabundance of toppings. There was enough for two days of leftovers for Patti and me, which is what happened. She fed two of our grandkids and herself the next day. I even stole a little of the leftovers.
My Order
I went with my favorite dish at Casa Corona, the Swifturrito. Jon Swift, a friend of Casa Corona, came up with this recipe, and I have to say I'm glad he did.
It starts with homemade short ribs marinated in an excellent sauce that you can taste through your bites in this burrito.
The burrito also has refried beans, Spanish rice, and jack cheese rolled up in a large flour tortilla, then covered in chile verde basing and more jack cheese on top.
You can't ask for more in my book. It's another dish like the King Nachos that gives you the opportunity for leftovers due to the sheer size of the burrito.
If you haven't been to Casa Corona or haven't been in a while, now's the time to go.
Pick a Friday night, get dressed casually, and enjoy a meal and a drink.
