Piquant Indonesian spices are woven into dishes that use classic French techniques. Seasonal tropical ingredients—coconut, lobster, lemongrass—combine for a culinary immersion that celebrates the best of both worlds.
For appetisers we recommend the Smoked Duck Breast with Lukewarm & pink, crush spiced “Local peanuts”, roasted garlic puree, cherry tomato, shimeji mushroom & “Tamarillo” reduction, and the White Fish Ceviche & Soft Shell Crab with Citrus dressing served with softshell crab Tempura & coconut flakes.
For the main course they have some extremely tempting options including "Caponata a la Siciliana" Classic caponata on grilled marinated eggplant layer served with roasted cherry tomato, mozzarella gratin & baby rucola, "Beef Cheek 73 degree" Soft & tender Wagyu beef cheek cooked Sous-vide, creamy polenta mango and cornichon relish, seasonal vegetable & thyme jus, and Crispy Skin Barramundi Fillet with Fricassee du puy lentils, green pea puree, asparagus cherry tomato, pesto sauce & parmesan crisp.
