A new plant-based Mexican food pop-up opened up on Abbot Kinney in Venice a few months ago, and not only does it offer incredible plant-based tacos and delicious margaritas, but it's also organic.

I stumbled upon this pop-up while walking home after date night, it was lit up with lights everywhere and it looked like I walked into a beautiful resort in Cabo.

We were able to get seated but it was on the sidewalk, which was still cute but it's nicer inside their little cabana area. Let's start off with their drinks.

First, they have a pretty epic selection of tequila and different types of mezcal, which I appreciate because it's in my opinion --the best alcohol. They also offer beer and wine, and coffee on the weekends.

I tried their skinny margarita which is very strong, it has mico tequila, curacao, lime, and pink salt. Next, they have a yuzu basil margarita with mico tequila, yuzu, lemon, Thai basil, and some simple syrup.

My personal favorite is the Guava Picante Mezcalita which is vacation in a glass. It has Fresno chili-infused mezcal, guava, lime, and hibiscus.

If you come during happy hour which is from 4-6, margaritas are $10, pitchers are $36, beer is $6 and juneshine is $8.

Tacos during happy hour are $3, guacamole and chips are $6, salsa and chips are $4.

When I say they have the greatest guacamole I've ever had and you absolutely need it in your life, I mean it.

In addition to chips and guac, enjoy some of their blistered peppers for $4 that taste pretty darn good too. Now, lets talk about their tacos. They come 2 per order, and they have 4 different options.

Gringa tacos have impossible Asada, shredded cheese, shredded cabbage, pico de gallo, jalapeno creme all in a siete tortilla. These are my #1 favorite tacos, if you were to give them to a non-vegan (myself) you wouldn't be able to tell the difference between regular meat and impossible.

Desayuno tacos ave a fried egg, russet potatoes, guacamole, cilantro, fried shallots, buena salt, in housemade corn tortillas. These are DELICIOUS. The egg is organic and the yolk is bright orange.

Calabasa squash tacos have spiced calabasa, salsa roia, purple radish, pepitas, cotija, housemade corn tortillas and you can substitute the cotija cheese with almond cotija. These are my least favorite but still pretty good.

Grilled Cauliflower tacos have roasted cauliflower, pico de gallo, chipotle crema, cilantro and they're made with housemade corn tortillas. I like these a lot.

In terms of meals, they have a nice little selection of huevos rancheros, pozole, quesadillas, ceasar salad, and even a buena burrito.

While this is only a pop-up, I'm hoping it stays forever because it's an incredible summer spot and has some of the best margaritas I've had. Highly recommend to anybody
