Austin is the tip of the spear of Texas' most innovative dining trends, and food trucks are leading the charge.

So look, summer is nearly upon us and is the perfect time to get your food truck game on, so we've scoped out some of Austin's popular ones for this list.

We also suggested some dishes that should be tried at each truck (besides fries!) if you're looking for a few new eats outside the box.

From fresh, hand-made tacos to custom dessert food, Austin's mobile food trucks offer an impressive array of quality food you can enjoy outdoors in the South Texas warmth.

As a bonus, during these pandemic times, they offer a delicious way to avoid indoor dining.

Social media is updated most often and will have the latest information on location and hours, so be sure to check them out first to verify this all.

Although some people are sometimes ambivalent about food trucks, these will give even a four-star restaurant a run for their money regarding value and flavor. What's more, they will beat out most fast-service restaurants when it comes to speed of delivery.

When you're running errands and looking for a quick bite to eat, food trucks are the perfect curbside solution. No longer are food trucks looked down on by people on the go, especially for folks seeking specialty items like vegan, barbecue, lobster rolls, tacos, or sandwiches.

So without waiting another #nomnom minute, here are some of our top picks and some fav dishes to grab while you're there.

1. Valentina's Tex Mex BBQ

BBQ with a Tex-Mex twist is the name of the game at Valentina's.

Choose from taco goodness like smoked brisket and guac, tomatoes, serrano, and sea salt. Fresh hand-rolled flour tortillas, spicy salsa, avocado, cilantro, and lime are a family favorite when it comes to accompanying the BBQ.

Open for takeout, and be sure to get there early if you're jonesing for breakfast tacos!

2. Kerlin BBQ

With traditional meats like Prime Angus Brisket, Pork Ribs, Beef Hot Links, and Pork Belly Burnt Ends, what more can a BBQ purist ask for.

Ok, how about Blue Cheese Coleslaw or Jalapeno Dill Potato Salad?

And sure, Texas is a BBQ mecca, but who can't resist a perfect kolache? Kerlin is known for a perfectly baked, soft kolache. They stuff their tender brisket into their sweet kolache dough, and we can't get enough of it.

'Nuff said.

3. Burro Cheese Kitchen

Just when you think you know grilled cheese sandwich, you run into a Zagat-praised artisan grilled cheese sandwich that will put your homemade white bread and American slices to shame. Trust us on this.

An entire food truck menu dedicated to grilled cheese sandwiches? The Rainey Street food truck meets shipping container serves gourmet grilled cheese with Havarti, pesto, brisket, and more.

A must-try is The Long Tall Texan - cheddar cheese with smoked brisket and a pineapple serrano sauce on sourdough.

4. Conscious Cravings

Vegans and meat-eaters get along well here at C.C. We especially dig this food truck for a healthy, feel-good lunch. All their salads and wraps are made with organic ingredients, so you can truly taste the difference.

Among many other things, a must-try is the Spicy Chickpea Wrap, which combines Indian-style chickpeas with lettuce, organic tomatoes, grilled onions, and chimichurri sauce—all bundled in your choice of a white, wheat, spinach, or cayenne tortilla.

Everyone wins here at Conscious Cravings.

5. Churro Co.

"Bet you've never had churros like this before" is the tagline, and the truth is it's like heaven in your mouth. Pretty much any churro your brain can come up with is something that can make for you.

Here you'll find an array of out of this world combos and toppings: apple pie and salted caramel (Texas Comfort), chocolate caramel sauce with chocolate crunch flakes (Double Trouble), and graham cracker sugar with Mexican chocolate sauce, whipped cream, and toasted marshmallows (Campfire).

Your welcome.

6. El Primo Taco Trailer

An ATX staple, El Primo serves up tortas, tacos and burritos. EPTT can be found in a bright, can't miss food truck that, without a doubt, is the perfect way to kick off a day or weekend.

My fav? The Migas breakfast taco, which according to yours truly, involves some of the best Migas in the ATX

So, there you have it, ladies and gentlemen, those are the best truck stops and food trucks to get a great meal from this summer around Austin, Texas.

Now you only have one decision to make – Where to go and eat first!
